How to make cinnamon simple syrup

Cinnamon Simple Syrup can be used for lots of purposes. For example, say you work at a bar (like me) that doesn’t serve Fireball and your guests are insisting to one another that they must take shots of Fireball. You can then interrupt them by saying, “sorry, we don’t have Fireball but, I can make a nice Cinnamon Whiskey shot for you.” We’ll get to the Cinnamon Whiskey shots later. As for now, here’s how to make cinnamon simple syrup.

4 cups sugar

4 cups water

3 large cinnamon sticks (4-5 for stronger cinnamon flavor)

Pour sugar into a 6 quart stainless steel pot. Whisk in sugar helping to dissolve most of the sugar. Place pot over medium to hot burner and allow mixture to come to a boil, whisking occasionally. Once mixture comes to a boil, add cinnamon sticks. Boil with cinnamon sticks for approximately 30 minutes before reducing heat to a simmer. Simmer for an additional 30 minutes before turning mixture off to allow it to cool. While cooling, allow cinnamon sticks to steep into the mixture. Once completely cooled, the simple syrup is ready to be used or stored. Can be stored in a refrigerator for 3-4 weeks.
